Quick-mix Doughnuts
Sunday cooking is sorted with these little crispy crunchy parcels of fluffy soft sweet deliciousness
INGREDIENTS
- 1 ¼ cup flour
- 2 tsp baking powder
- ¼ cup rapadura or brown sugar
- 2 tbs extra virgin olive oil
- Pinch of salt
- ½ cup sparkling water
- 1 tsp vanilla bean paste
- Icing sugar and cinnamon to dust
- Light olive oil to fry in
METHOD

Combine flour, baking powder, sugar, olive oil, salt, sparkling water and vanilla in a bowl with a metal spoon.

Heat oil in a saucepan on medium and test a little dough to see if it’s hot enough.

Once the test piece of dough begins to bubble quickly, drop a tablespoon of dough at a time into the oil. You can fry 2-3 doughnuts at a time. They will puff up and turn golden brown when ready.

Drain on paper towel and repeat with remaining dough.

Dust with icing sugar

Serve while hot.
